Recipe: Tomatoes on Toast

Is it just me? Or does it happen to everyone?

Just the thought of returning home from work sends my digestive juices to over-drive.

When faced with such extreme cravings, I usually end up grabbing the first thing that I can get my hands on which is usually the store-bought packaged snacks - mostly biscuits, Indian savoury deep-fried snacks, chikki, etc. And unfortunately, most of them are high in calories.

This is one of the easy-to-make, kinder-on-the-heart and satisfying snacks that I've recently discovered - Tomatoes on Toast and it doesn't take much time to whip up.



This is nothing fancy and is simply slices of bread toasted, drizzled lightly with olive oil and topped with tomatoes that have been lightly cooked with onions, green chillies and garlic.



TOMATOES ON TOAST

Ingredients

Slices of Bread
Onion - 1 chopped finely
Green Chillies - 1-2 (Depending on personal preferences)
Garlic - 5-6 cloves crushed
Tomatoes - 2 chopped
Olive oil - 2 Tbsp
Coriander leaves for topping (optional)
Crushed Pepper (optional)
Salt to taste




Heat a Tbsp of olive oil in a non-stick pan. Saute the chopped onion and green chillies till the onions are transparent.

Add the crushed garlic and saute till it is fragrant and the lightly browned.

Add the chopped tomatoes, stir and switch off flame. (I prefer not to cook the tomatoes too much as they will become mushy)

Toast a couple of slices of bread and drizzle a few drops of olive oil on it. (Cut the toasts into 4 or 6 if you like small bite-sized pieces).

Top the toasts with tomato mixture.

Add chopped coriander crushed pepper.



As a variation to this basic recipe, pieces of sausage, meat or even scrambled eggs can be added to the tomato mixture for a lovely and filling bite. A dollop of low-fat mayo would be like icing on the cake.
